“Brew Izumo, aim at Fuji.” Respecting the craftsmanship of Izumo toji, and utilizing the features of rice, we strive to brew natural and pure jizake of Izumo where people make good matches with each other and with food. Having “Gods dwell in the details of sake brewing” in mind, we brew all sake “steaming in Japanese pot, making koji by hand, and pressing in wooden tank,” and never compromising.
